How do I unsync an iTunes account from iTouch?

I am selling my itouch and want to unsync my itunes account from the itouch but still want to keep the 2.0 upgrade that got, can someone please let me know how to do that. Thanks.

1. i think if you click restore on the summary of your device it will extract everything but then put back the software only so yea hope it works
